Due to the extinction of this much needed lockdown and the risk involved in online food delivery. Most of us realize that currently home-cooked food is the only wise and safe option and I firmly believe that at this time, your home cooked food need not be boring, that's why while deciding these five recipes my focus has been on fresh and creative dishes that you may never try at home otherwise.
Basic ingredients that are easily available in this situation and of course beginner friendly recipes.
Trust me self cooking not only make you more conscious of what you eat but can also be more fun than watching a random episode on netflix.
So let's begin with our five delicious recipes :
Cooking for a tasty and easy high protein evening snack, try paneer popcorn.

1) Paneer (cheese) Popcorn :

- Take about 50gm of fresh paneer cubes.
- Put rock salt, turmeric powder (haldi), coriander powder (dhania powder), chaat masala and a dash of lemon juice.
- Mix well to evenly coat the masala, keep aside.
- we will take 1cup of gram flour (basin).
- Put some rock salt and black pepper (kali mirch) in it.
- Now with little water, we will make a thick batter.
- Now in another plate, take about 0.5cup of semolina (sooji).
- Now, you just need to evenly coat the paneer cubes in the gram flour (basin) batter first and then further coated with semolina.
- Coat all the paneer cubes in the same way and then let them get set for about 5min.
- we will put a frying-pan over a high flame and once it gets hot, generously add mustard oil to it.
- Once the oil gets hot, turn on the flame to medium.
- Now carefully place the paneer cubes in the hot oil.
- Let them cook evenly on all the sides.
- Once they are well cooked, simply scoop them out.

2) No Coffee - Cold Coffee :

- To make it in a blender, put one glass of chilled milk, one tea-spoon of no-coffee powder.

- Place a pan over a medium flame.
- Put in the chickpeas (chane) and continuously stir them for about 25 to 20 min.
- They chickpeas (chane) will turn dark chocolatey brown and that's when you know It is done.
- Let them cool and then grind them to make a fine powder. Its smells exactly like coffee.
- Put 1glass of chilled milk, 1tea-spoon of no coffee powder, 1tea-spoon of mishri powder and blend until smooth, that's it.
- Pour it in a glass, garnish it with a roasted chickpeas powder and enjoy that taste exactly like cold coffee.

- Take about 1cup of whole wheat flour (aata) and 1/4cup of gram flour (basin) and mix well.
- Now in another bowl, take about 1/2cup of ghee and 3/4cup of mishri powder or sugar.
- You can even use jaggery powder gud ka chooran) instead.
- Now mix this mixture thoroughly until it gets puffy.
- Once puffy, we will add 1tea-spoon of grounded-cardamom (ilaayachee).
- Also add the mixture of ingredients to make a soft dough line consistently.
- Once the dough is ready, keep it aside.
- we will take a frying-pan over high flame.
- Put about 1/2kg salt into it.This salt will help our frying-pan to mimic an own and it can be used many times.
- Keep a small bowl or a stand inside. Now cover the frying-pan and let it pre-heat about 10min.
- take a plate. Sprinkle some ghee over it and coat it evenly all over.
- Now, we will take little dough and make a shape of your choice.
- The biscuit will expand after baking so make sure you make the small size of it and keep them at a distance from each other.
- By this time, our frying-pan would also be well heated.
- Carefully place the plate in the small bowl, cover the frying-pan with the lid and let it bake on a medium flame for about 10min.
- Now, let's check this looks well baked.
- Turn off the gas and carefully.
- Put the plate out as it would be very hot.
- Let it cool down.

- Peel them, cut them, put them in the air tight container and place them in the refrigerator for about 6-8 hours.
- Once you have the frozen bananas ready with you.
- Simply put them in a blender along with jaggery powder (gud ka choorn) and peanut butter and blend them all together.
- Now, put it in an air-tight container, place it in a refrigerator for about 1hour.
That's it, your banana peanut ice-cream us ready without cream yet so creamy and tasty. This vegan ice-cream willy surely find a place in your heart.

- To make it in a mixer grinder, put half a cup of whole wheat.
- ½ cup of jaggery powder (gud ka chooran), 1 tea-spoon of cocoa powder, ½ a tea-spoon of baking powder, ghee (you can also use butter), 100ml of full cream milk.
- Blend all the ingredients and you will get a smooth consistency.
- We will add crushed dry-fruits, although it is completely optional.
- Mix them properly.
- Now take a small bowl, greased it with little ghee and dusted with whole wheat flour (aata).
- Put the batter into it, only till half the small bowl is filled.
- Garnish it with some more dry fruits if you wish.
- Now, we will be using the same method of baking as we did for the cookies.
- Place the small bowl carefully in a frying-pan and let the cake bake for about 40min.So that the cake is well baked.
How fluffy it has turned out to be, simply amazing.
